History Its origin is lost in the night of the times, being one of the oldest on the island. The first written testimonies are from 1696 to Cupani in 1696 and then to 1970, when Pastena describes four different varieties of Catarratto: the common or Latin Catarratto, the sparrow glossy cataract, the glossy cataract and the cataract polished or Extra glossy.
Features ampelographic Leaf: small or medium, orbicular or rounded, sometimes sub-rheniform; five lobes; V-folded or overlapped edges; Upper deep side limbs closed or overlapped edges; Lower side nipples not marked or, even, just mentioned; V more or less wide or parallel edges; Lobes, generally less marked than those of the "common white cataragraph" and twisted; Corner at the top of the obtuse terminal lobes; Top-of-the-line color of greenish-light, surface of the wavy or bulging flap, almost glabra; Pale green lower page, arachnoid more or less intense; Ribs of order, both on the upper and the lower vertex; Not flashy; Flap of medium consistency and twisted; Teeth at margins almost straight or slightly concave; irregular; On a narrow base. Bunch: medium, cylindrical, rather elongated; Simple, sometimes winged; Compact or excessively compact; Average length of bunch cm 16; Wood peduncle, medium length, rather thin, hazel-colored; Short or medium medium, thin, green, with little noticeable and non-verrucatory tendon; Short, colorless brush. Acino: medium or small (smaller than that of "common white cataract"), spheroidal or ellipsoid marked, regular, with regular cross-section (circular); Yellow-golden peel, with regular color distribution, shiny, pruinose, thick; Persistent navel; Juicy pulp, sweet flavor (slightly less sweet than that of "Common White Catarra") and simple; Colorless juice.
Features wine Vinified in purity has a straw yellow color that tends to golden. The olfactory plant is fruity and slightly floral, with scents of honeysuckle and citrus fruit, especially lemon on an aromatic herb background. The palate is very alcoholic and structured, but the flavor is quite flat even though the mouth expresses a remarkable freshness and some acidity.
Notes Resistance to meteoric adversities, diseases and parasites: Vine is generally resistant to parasitic diseases, strong heat, and drought; The bunch is less to the oidio, the shingles and the gray mold, due to the compactness of the same. In the Marshalese there was a certain cultivar's receptivity towards the smoke.
