About thirty vine parcels for a total of just over six hectares, of which over three implanted in pinot meunier, two planted with pinot noir and chardonnay one. These are the possessions of the Bourgeois-Diaz family, who for four generations producing Champagne in Crouttes-sur-Marne, commune in the south-west of Reims. It is currently Jérôme Bourgeois-Diaz, class '77, who runs the domaine following the biodynamic agriculture dictates. Vines that reach an average age of 35 years, know no pesticides or synthetic substances, as well as in the cellar are banned chemical yeasts and any other artificial additives. During vinification, each step of production seems to be driven by a profound harmony that characterizes strictly artisanal methods. After fermentation, the wines mature for one third in oak barrels and two thirds in stainless steel tanks. Finally it creates the cuvée, and 40 thousand bottles per year placed on the market only after long periods of rest on the lees, ranging from two years to the cuvee base, to sixty months for major Champagne. Born this way the labels "Bourgeois-Diaz", synonymous with Champagne following the rhythms of nature, to get to the cup to express the very essence of a magical land.
