Colour

Deep ruby red.

Bouquet

Overripe red fruit but still crisp and pulpy. Spicy notes appear in the background, especially pepper and cloves, followed by mineral hints and a deep tobacco nuance.

Flavour

Full-bodied, enveloping and velvety. The imposing and solid body maintains an elegant and silky profile thanks to the perfectly balanced acidity and sweet, perfectly melted tannins.

Pairing

It pairs well with braised meats, game in general and hare in particular, duck in orange sauce and long-aged cheeses. Moreover, it pairs well with lobster. Finally, it is a great wine to be enjoyed by itself.

Production technique The drying process occurs naturally for 3-4 months in the drying loft. The grapes lose 40% of their original weight.
Vinification Soft pressing of the loose berries is carried out in the first fortnight of January. Fermentation: Destemming followed by soft crushing of the grapes. The fermentation lasts 22/24 days with daily pump-overs.
Ageing 5 months in stainless steel, then in wood for 15 months (half in Slavonian oak casks, half in second-passage barriques). The wine finally ages 6 months in the bottle.
