Harvest on late September - early October, harvested by hand. |
Vinification |
The grapes are destemmed and pressed; the must remains in contact with the skins for a few days at a controlled temperature. |
Pairing |
Ideal with the whole meal, it is perfect as an accompaniment to full-flavoured fish soups and cheese, for preference sheep’s and/or goat’s, or medium mature cow’s cheese made with whole milk. |
