A balanced champagne, perfect as an aperitif or at the beginning of the meal.

Colour

Straw yellow.

Bouquet

Like an orchard in late spring, this blends floral and fruit notes of ripe apple, white cherry and apricot.

Flavour

There's a firm backbone of zesty acidity and underlying minerality, with a lingering hint of ginger on the finish.

Origin The grapes come from various terroirs belonging to the estate.
Soil composition The soil consists of a layer of light earth over a chalk subsoil.
Harvest The grapes are hand picked and each plot is picked separately and vinified apart.
Production technique The harvest is either pressed in a traditional vertical press, or pneumatically. Only the "cuvées" - the juice from the first pressing - are kept for all our blanc de blancs.
Vinification Fermentation in thermostatically controlled vats. Malolactic fermentation takes place. Blend of wines from two years.
Ageing After bottling, the wines carry out their second fermentation and develop their mousse in cellars, which are hewed out from Cramant chalk. They age there several years before being disgorged and usually dosed at 6 to 8 g/l.
