Vinification |
Alcoholic fermentation, which took place separately for the two varieties, lasted about 15 days at an average temperature of 28°C in temperature-controlled stainless steel vats. This was followed by maceration on the skins for 15 days with frequent pumping over and punching-down. |
Ageing |
Immediately after racking, the wine underwent malolactic fermentation in new and second-passage Allier and Tronçais barriques, aged for about 18 months. After blending the lots and a short rest, the wine was bottled and further refined in the bottle. |
Pairing |
This wine deserves a meal worthy of its richness and complexity. It can be perfectly paired with main courses of lamb or game. It is also excellent with duck or beef pâté. |
