Fermentation period	Malolaktische Gärung: direkt nach der alkoholischen Gärung in Eichenholzfässern (500 l).
Production technique	Sanfte Aufweichung in vertikalen Edelstahlbehältern unter freiem Himmel für die ersten 10-12 Tage alkoholischer Gärung.
Vinification	Jede Weinsorte wird getrennt bearbeitet. Nach dem Abbeeren und dem sanftem Pressen wird der Wein durch Kohlendioxid gesiegelt; dann noch ein Tag Verfeinerung. Die alkoholische Gärung fängt 24-36 Stunden später durch wilde Hefen an.
