Ballabio Farfalla Noir Collection Metodo Classico Extra Brut

After a long bottle ageing it is a synthesis of elegance, freshness and harmonious complexity. Its balance comes from Pinot Noir grapes, clone 386, coming from the property's vineyards with a predominantly calcareous structure of indisputable value set on hillsides between 300 and 500 meters above sea level.

	Perlage Fine and persistent foam.
	顏色 Straw yellow with antique gold reflections.
	香氣/花束 Bouquet in perfect balance between fruity notes of white flesh peach and pear, hints of toasted dried fruit and fresh bread.
	味道 On the palate it has an elegant creaminess with a long aftertaste deeply rich in savoury and tangy sensations.

Pairing

This is an excellent aperitif and accompanies all kinds of entrees.

釀造	Soft pressing of the whole grapes to obtain and ferment only 40% of the must at a controlled temperature. Ageing in steel tanks until Spring on its own yeasts.
陳年	Blending of the cuvée using, together with the vintage wines, a good 25% of wines from old vintages aged in magnums to give complexity and uniqueness. Draught with selected yeasts in the winery and ageing in bottle for at least 30 months. Disgorgement and a further 2 months of evolution before release.
