Vinified in wood for 20%, it undergoes a natural fermentation without added yeasts, only indigenous yeasts. First élevage on the lees that lasts about a year without rushing; the wine clarifies slowly as it did 50 years ago. Bottled without filtering or collage. Dosage 3/4 g/l. |
